Kate Keitt mango is a large mango, similar to the Haden variety. Although they are fully mature when they are green, Kate Keitt's meat becomes soft. Kate Keitt stays on the tree longer than other varieties, producing very sweet fruit. They are less fibrous than most mango varieties, so they are softer and smoother. Add Keitt Mango slices to salads or to salsa, smoothies, sorbet, sauces and poultry and fish dishes, of course, simply to eat.

Keitt mangoes are rectangular with light gray to dark green skin, but occasionally yellow blush. Colors can be misleading, and the only real way to determine whether these large mangoes are ripe is to touch. The skin should be touched slightly, even so, mango can rest for a few days. Keitt mangoes are fiber-free and have thin seeds that produce more smooth orange flesh. Keitt mango has a rich sweetness and a hint of honey.

Four Seasons / availability

Keitt mangoes can be used for a short time in late summer and early autumn.

Current facts

Keitt (pronounced kEEt) mango is the largest mango (Mangifera indica) variety on the American market; sometimes it weighs up to five pounds. Keitt mangoes are said to be some of the most delicious and rich mangoes. Keitt mangoes grown in California meet strict organic standards.

Application

Keitt mangoes are preferably fresh and inedible, but they can also be added to fruit salads, smoothies or sorbet, or any number of salty dishes. When preparing, slice mango slices from around the seeds and cut the meat with a cross-hatched pattern. Turn out the slice and cut the cube from the skin. Cubes can be well frozen for future use. Keitt mangoes are paired with a variety of drupes, oranges and berries, and can be used in a variety of baked goods such as muffins and scones.

Geography / history

Keitt mango is the seedling of an Indian variety first planted by Mrs. Keitt in Florida in 1939. It can now be found that the Keitt variety is mainly grown in Coachella Valley, California, although it can still be grown in Florida. Mango belongs to the family Anacardiaceae, as well as poisonous oak and ivy, and has some of the same characteristics. Those who are allergic to the family's plants should make sure to wash their hands and face after eating fruit.
