The technological process of quick-freezing and fresh-keeping of Toona sinensis sprouts is as follows: cleaning, → blanching, → cooling, → bagging, → quick-freezing.

Cleaning: the buds of Toona sinensis are purplish red and the buds are 10-15 cm long. Wash the buds with clean water to remove dust, soil and so on. Pay attention to do not rub when cleaning, so as not to cause tissue damage.

Blanching: use 0.2% sodium bicarbonate as blanching solution, blanch Toona sinensis buds in boiling scalding solution for 30 seconds.

Cooling: immediately after blanching, put it into sodium bisulfite solution to cool. In order to accelerate cooling, multiple containers can be used to hold coolant for staged cooling.

Bagging: drain the cooled toon buds and put them into a plastic bag according to 0.5 kg each. The toon buds are arranged neatly at the end and the mouth of the bag is folded.

Quick freezing: the packaged Toona sinensis buds are immediately placed in the freezer, frozen for 24 hours, and then transferred to-18 ℃ for storage. In quick-frozen storage, the flavor quality and color changes of Toona sinensis buds in the bag should be checked frequently in order to sell or deal with them in time.
