The first national grading evaluation of organic tea, in order to make organic tea farmers strive to be seen.

Zeng Shuli, head of the production team of the Guogong Foundation, one of the executive units of this grading evaluation, said that many organic tea farmers reported that tea without graded evaluation often failed to sell at a good price, and began to compare with ordinary tea in 2017 to assist tea farmers in selling.

Zeng Shuli explained that this is the third time to conduct organic tea evaluation. The previous two organic tea evaluations were regional, and the tea farmers involved were mainly Pinglin and Shiding. This year's third session was the first time for organic tea farmers across the country to participate together. It is also to let more organic tea farmers' hard work be seen.

The evaluation is introduced into the tea conversion TAGs system, and the tea after evaluation has its own flavor card.

Su Zongzhen said, "this evaluation is the first time in China to grow organic tea to help farmers sell, but also to let the public know more about organic tea and have more confidence in organic tea." In order to let the public know more about organic tea, this evaluation introduces the TAGs classification system published by the Tea Reform Market this year. This system integrates the flavor wheels of various major domestic producing areas and various kinds of tea. Taking black tea as an example, there are all kinds of soup colors, aroma types, lobular black tea and local varieties of black tea on the flavor wheel, which can find its own characteristics.

After the evaluation and grading of tea, the tea market will also make its own flavor wheel and flavor card according to its aroma, brown color, taste, and so on. In the future, farmers can use it on packaging, and consumers can know the information of this tea at a glance. And quickly find the tea that suits you.

The tripartite evaluation of industry, government and school, and the qualification of the evaluation also needs multiple checks.

One of the major features of the TAGs classification system is that the classification and evaluation must span the three boundaries of production, government and school. the three representatives of this organic tea evaluation are: Su Yanshuo (official), director of the Wenshan branch of Tea Reform; Tsai Chih-hsien (academic) of the Horticulture and Landscape Department of Taitung College; and Tsai Yung-jin (production) from the Qingyuan Tea Company of Jingualiao.

Su Yanshuo said that graded evaluation and evaluation also came into being after layers of hurdles. Take Tsai Yung-jin, an industry representative, as an example. At first, after a written examination, four were selected. The other three candidates agreed that Tsai Yung-jin was the most suitable. "the grading results should be convincing. The review is also the key, and only those who are recognized by everyone can evaluate it."

There are four evaluation criteria, namely, appearance (20%), water color (20%), aroma (30%) and taste (30%). The appearance of tea should be tight and neat, dark green with luster; the water color of tea should be honey-green, yellow, clear and bright; the aroma should be elegant, floral and fruity, and the taste should be sweet and fresh, smooth and with a rhyme.

Habitual tea will have obvious floral fragrance, while organic tea will add fruit and sweet fragrance.

Academic representative Tsai Chih-hsien explained that the first aroma of tea is the most important, while the standard of organic tea will be slightly different this time. "there is no restriction on the kind of organic tea handed over this time, so the flavor will be rich." He said that even if the aroma of fruit, sweetness, etc., will be included in the evaluation, rather than directly deducting points.

Apart from the aroma, another big difference between organic tea and habitual tea is the water color of the tea. Tsai Chih-hsien says that many of the tea varieties are made of tender tea, so the color of the tea will be greener, while the growth time of organic tea is longer, and the chlorophyll content is lower than that of the tender leaves, and the color of the tea will be yellow.

This year, a total of 80 organic packaged teas participated in the evaluation. In order to avoid gathering, tea farmers were not open to watch the match, but the evaluation process lasted about three and a half hours. The three judges first looked at the appearance of the tea, then smelled the fragrance, and finally drank the tea.

Su Yanshuo explained that the climate is cold and hot this year, and the growth of tea trees will slow down as expected, but will accelerate in case of heat. The situation of stopping and growing for more than three times this year has occurred more than three times. Originally, it could have grown into three leaves in about 20 days, and it could have been extended to more than 30 days. As a result of this difference, the tea leaves are too old, and it is more difficult to make tea. "if the time is lengthened, the later preservation will encounter the rainy season, and it will be more difficult to make and preserve."

From the point of view of consumers, good tea should break through layers of hurdles.

"the hardest part in the selection process is to choose the golden frog from the silver frog." Cai Zhixian said that the characteristics of each tea are different, and the purpose of the evaluation is to magnify the shortcomings of each tea, and the fewer shortcomings of the tea, the more difficult it is to select the golden frog from the silver frog. "when drinking each cup of tea, you have to stand from the standpoint of the consumer:'is this tea worth the price?'"

Tsai Chih-hsien, for example, says that the winning tea can be sold at a better price in the end. In the case of bronze frog reward, the winning tea sells for NT $4,000 per jin. If you drink it, you have to judge whether the tea is worth NT $4,000 or not. "is the aroma balanced enough, is there any aftertaste, will it be bitter, and if it is, will you buy it?"

According to the results of the evaluation, a green frog with the highest honor was selected, 12 teas received golden frog reward, 22 teas received silver frog reward, and 26 teas received bronze frog reward. Su Yanshuo said that this time the green frog won with a mellow tea body, incense, enough rhyme, and a complete leaf shape. "Organic tea is prone to insect pests, and the complete leaf shape shows that farmers have done a good job in cultivation and management."

Zheng Xinzhong said that the planting of organic tea gardens is very difficult, and the management of insect pests and weeds must be very diligent. Su Yanshuo explains that Zheng Hsin-Chung's tea is not astringent for a long time, its aroma is balanced, there is no trace of bitterness, it can drink pineapple and melon and fruit in his mouth, and the taste is mellow. How to make the best flavor of bag-grown tea? Tsai Chih-hsien says that the key to good tea lies in tea, water quality and water temperature. "if you want to know the nature of tea first, you can first ask tea farmers how to make tea."

Before buying tea, you can first try and smell whether this tea is your favorite, and when you buy tea, you can also ask the other party how to make tea. "ask the other party what kind of water is used first. It is usually very interesting to brew tea in mineral-rich mountain springs."

If you want to smell different kinds of tea and drink different tastes, you can adjust it according to temperature and time. Tsai Chih-hsien says that the aroma and taste of tea are the result of all the conditions. You have to pay attention to a lot of details. "if you want to show the fragrance of flowers, you can use water above 90 degrees Celsius. If you want to smell fruit or sweet smell, it would be better if the water temperature is lower than 90 degrees Celsius. If you want to drink a thicker taste, you have to soak for a longer time."
