Since 2018, we have cooperated with Yue Ming Primary School on the plan of "fish-eating education into the campus". So far, the children have a good understanding of 18 kinds of seafood, and the creatures in the water have become the daily life of the school. Many friends wonder how such a strange diet education is carried out.

After discussion with the headmaster, we decided to hold a sustainable seafood exhibition and dinner of "Fish Education on Campus-Review and Prospect" at Yueming Primary School on February 7, 2020. In addition to inviting partners to assist in fish education along the way, it is also open to foundations, associations and schools that want to work together. Next, I would like to share with you ─ eel, the last fish eating lesson of Yue Ming last semester. This delicious fish still has many unknown secrets. Eel fry is a great event in eastern Taiwan in winter. It is necessary for children to know eels. The curiosity of the children has inspired us to explore the unknown ocean world bravely.

On the day of the course, the sea bass eel was invited by Pingtung to go to school. After meeting the children, the eel lived for 100 million years, but human beings still do not understand it.

When the eel seedlings were caught crazily along the coast of Taiwan in December, the eel, a creature that had lived on the earth for 100 million years, still had many mysteries. For example, the eel had a life record of more than 150 years, and how to reach the source of the Kuroshio at least 2000 kilometers away without eating during the spawning migration. Although there are a lot of studies on eels, the world still cannot fully understand this strange fish.

There are six species of fish in the family Eelidae in Taiwan, among which the white eel is favored by the Japanese, which has led to the huge consumption demand of the barbecued eel. In addition, the white eel is still unable to cultivate completely, and all rely on the natural capture of seedlings, which makes the white eel face great pressure on resources. It is listed as an endangered species by IUCN, which is obviously not suitable for serving nutritious lunches for school children.

Therefore, we chose the sea bass eel, which is very well-known in Taiwan, as a "LC, Least Concern" species, not only to let the children know the eel familiar to their grandparents, to connect the family's common memory, but also to know that resources and consumption must coexist.
