Steak, spaghetti must have black pepper, peeling will become white pepper, like shady pepper, belong to perennials, the longer you live, the more fruit, spicy leaf insects do not like, not too sick, do not need to be drugged or fertilized, only rely on dead leaves and humus to supplement fertilizer, can be harvested all year round.

There are many kinds of plants in the family Piperaceae. In addition to the common edible black pepper, there are also native species in Taiwan, such as red stem pepper grass, large round leaf pepper with edible leaves, and so on. The six Turtle Research Center of the Forest Research Institute has set up a "Fan Ping Pepper Garden" to collect more than 20 species of Piperaceae plants. For example: pepper, rattan, big round leaf pepper, red stem pepper grass, and other vines, and open ecological education visits to let people know more about the pepper family.

Gong Guanning, an assistant researcher at the Forest Research Institute, explained that there are 8 genera of Piperaceae plants all over the world, and the common ones in China are Pepper and Pepper genera. It is often eaten that black and white pepper is Pepper, which is native to India, and Red Stem Pepper Grass is a native species in Taiwan. the rattan added in betel nut and the round-leaf pepper grass planted on the green wall, a common plant in the periphery of engineering construction, are also piperaceae.

On the other hand, black and white pepper on the market is actually homologous, and the difference lies in the way it is made. Gong Guanning explained that drying ripe fruit is black pepper, while soaking the fruit in water for 7-10 days, washing off the peel and then drying it is white pepper.

As for the mountain pepper "Magnolia" commonly used by indigenous peoples, rather than Piperaceae, it is a genus of Lauraceae. Because of its special flavor, it is often used in aboriginal cuisine, so it is called "mountain pepper". Gong Guanning explained that pepper is a semi-sunny plant, likes shady places, is a perennial woody vine, often climbs from trees, can reach a height of up to 4 meters, because of its trailing nature, it will quickly take root once the stem touches the surface.

Native pepper plants in China are mostly located in dense and sparse forests in valleys at higher elevations in Gaoping and Hengchun, and sometimes climb in coastal forests, under thickets or among higher coral reefs. Gong Guanning said that because pepper does not like bright light, it mostly grows in the lower layer of the dense forest, and only after climbing will it reach high ground.

The Shishan Pepper Garden, located in six turtles in Kaohsiung, is the largest pepper farm in China, with a planting area of 2-3 A. the owner of the farm, Chen Zhenshan, is the third generation to take over. "Pepper is perennial. the longer it grows, the more branches it will grow, and the more new buds will spit out, and the new buds will be able to pick pepper." Chen Zhenshan counted that decades have passed since his grandfather planted it, and the planting area will continue to expand in the future.

Talking about the difficulties encountered in growing pepper, Chen Zhenshan was stumped. "I haven't encountered any disease since I was planted. The leaves taste spicy, and insects dare not approach them." Usually, he and his mother only need to take care of pepper, and he only needs to hire a picker when harvesting. He said that pepper does not need to be drugged or fertilized, and can be harvested throughout the year only by replenishing fertilizer with dead leaves and humus.

While some of the collected pepper is sold to processors to make meat sauces, most of it is used to visit and make pepper flavor meals, and pepper seedlings are also sold to other farmers all over Taiwan. Chen Zhenshan said that pepper will grow on other taller plants, even under betel nut trees.
