Causes of easy infection of green mold in the production of edible fungi
In the production of edible fungi, many people feel that green mold is cancer, which is very annoying. It is believed that most people will not object to saying that green mold is one of the main pollution sources of edible fungi. There are many ways for edible fungi to pollute green mold, such as incomplete sterilization, lax aseptic operation, improper handling of raw materials, high base of miscellaneous bacteria in the environment, and so on.
The reasons why Trichoderma is easy to be infected in the production of edible fungi:
Edible fungi can produce enzymes that decompose cellulose, hemicellulose and lignin. the amount and activity of enzymes vary according to different species of edible fungi, the types of matrix and the stage of physiological development.
Cellulose is a polymer with supramolecular structure. Studies have proved that the decomposition of cellulase by basidiomycetes is not a single enzyme, but a multi-enzyme system. Among them, there are two kinds of clearly studied, namely C1 enzyme and Cx enzyme.
Most basidiomycetes mainly produce C1 enzyme and only a few can produce Cx enzyme. The activity of C1 enzyme and Cx enzyme of Trichoderma is quite high, which is much stronger than that of edible strains. Trichoderma pollution is often caused by edible fungi in the process of culture. one of the possible reasons is that the enzymes that decompose cellulose in Trichoderma have the upper hand.
According to the analysis of the above enzymes, simply reducing the nutrition of edible fungus culture medium to reduce the contamination rate of Trichoderma can play a certain role, but it is not desirable, because the incoordination of carbon-nitrogen ratio is bound to affect the yield of edible fungi. It is preferable to start with sterilization, aseptic operation and scientific management.
