Take Lentinus edodes as an example: a sign of the maturity of Lentinus edodes, that is, the bacterial membrane has been broken, the cap has not yet been fully developed, and there is still a little inner roll, forming a "gong edge"; when the folds have all elongated and changed from white to yellowish brown or dark brown, it is the most appropriate harvest time for Lentinus edodes. Lentinus edodes harvested at the right time has bright color, strong fragrance, thick cover and soft meat.

Second, pay attention to picking technology. When picking edible mushrooms, all mushrooms with stalks, such as Lentinus edodes, mushrooms, straw mushrooms, Ji mushrooms, Dictyophora, etc., must be harvested according to the principle of keeping small ones. When picking mushrooms, the thumb and index finger squeeze the base of the mushroom handle, rotate first left and right, and then gently pull up. Be careful not to hurt the mushroom bud. The fungi of colloidal bodies such as Tremella fuciformis, Auricularia auricula, Auricularia auricula and Pleurotus ostreatus, Pleurotus ostreatus, Flammulina velutipes, etc., should be cut off from the base with a sharp blade when harvested, and pay attention to keeping the blossoms intact.

Third, choose suitable weather. Harvest in sunny days is beneficial to processing, but high water content in cloudy and rainy days makes it difficult to dry and affect the quality. However, if the mushroom ear has matured, it should be harvested in a rainy day, but it should be processed as soon as possible. For black fungus, Tremella, etc., can be taken to stop spraying water, strengthen ventilation, and so on when the weather is fine.

Fourth, match the suitable container. The fresh mushrooms should be packed in small baskets or baskets, and should be taken lightly to maintain the integrity of the fruiting body and prevent the damage caused by squeezing each other. Especially should not use sacks, buckets, wooden cases and other containers, so as not to cause appearance damage or mildew. The fresh mushrooms collected should be sub-packed according to the size and shape of the mushroom for processing.

Fifth, stop water and control humidity before mining. If water is sprayed before harvest, the water content of the mushroom body is too high, dehydration and drying during processing, the bacterial fold will turn black, and the product will not meet the export requirements; if it is sold fresh, too high moisture will also cause mildew. Therefore, it is necessary to stop spraying water before harvest to keep the mushroom body in normal moisture.
