Modified atmosphere preservation refers to the cold storage method in a specific gas environment, which changes the content of oxygen and carbon dioxide in the storage environment on the basis of low temperature preservation, so that the content of oxygen is reduced to 2%, 5%, and the content of carbon dioxide is increased to more than 3%. This kind of environment can maintain the freshness of edible fungi during picking, reduce the loss, have a long shelf life, and achieve the purpose of inhibiting the respiratory intensity of edible fungi and delaying the aging and deterioration process.

Technical points:

The optimum temperature for low temperature storage is 0: 3 ℃, and the relative humidity is 85% Mel 95%. The temperature higher than the suitable temperature range will promote various physiological functions in edible fungi, accelerate discoloration and aging, and is also conducive to the activities of various pathogenic bacteria, resulting in increased and accelerated decay. Too low temperature will cause chilling injury or freezing injury to edible fungi. The effect of low temperature storage is closely related to the time of pre-cooling and entering cold storage, and the temperature should be reduced to the prescribed range as soon as possible after harvest. If the cooling is delayed, it will be difficult to maintain the quality of edible fungi after storage.

Mechanical injury can also stimulate breathing, and the increase of respiratory intensity is proportional to the severity of the injury. After the injury of edible fungi, it caused an open wound, increased oxygen consumption and respiratory intensity, which was not conducive to storage, but also promoted the growth of microorganisms.
