1. Quick freezing method
Suitable for Pleurotus ostreatus and other fresh-keeping. After the fresh mushrooms are harvested, they are divided into single fruiting bodies with scissors and knives, rinsed and distributed according to the size and tenderness of the mushrooms. After the cauldron is boiled with water, put in the fresh mushrooms, and the amount of fresh mushrooms is 20% to 30% of the boiling water. Stir in one direction with a leaky spoon or shovel until the mushrooms are soft. Remove the pan and place it in a large vat filled with cold water. After cooling, drain the water in the sieve and seal it in a non-toxic plastic food bag according to 1 kg or 0.5 kg. Put the mushrooms in a food box and store them in a cold storage of-18 ℃.
2. Low temperature method
It is suitable for the storage and transportation of 6-7 mature straw mushroom and other edible fungi. The loading box is a 40 cm high wooden or plastic box with a layer of crushed ice 5 cm thick at the bottom, covered with plastic film, 20 cm thick fresh straw mushroom on the film, covered with plastic film. Cover the film with a layer of crushed ice and transport it box by box. It can also be packed in cartons with a height of 25 centimeters and immediately sent to a freezer with a cooler to reduce the temperature to 14 ℃. The above two methods can prolong the storage life of volvariella volvacea by 3-4 times.
Third, cooling method
Suitable for Lentinus edodes and other edible fungi to keep fresh. Fresh mushrooms were packed in plastic bags with a thickness of 30 microns and stored in 1 ℃. The shelf life was 18 days, 13-14 days at 6 ℃ and 5 days at 15 ℃.
Fourth, the method of regulating atmosphere
Suitable for mushrooms and other fresh-keeping, silicone rubber film made of gas exchange window, embedded in the side wall of plastic bags, used to keep mushrooms fresh within 3-5 days, fresh mushrooms can also be collected to remove sediment and other debris, packed into wooden boxes. The thickness of the mushroom is 30cm to 35cm. Seal the mouth of the box after loading and store it in 18-20 ℃ environment.
5. Chemical method
General edible fungi are suitable for fresh-keeping. The chemical preservation methods of mushrooms are introduced as follows.
1. Salt solution
The mushroom body was soaked in 0.7% salt solution, and the effect was better at 4-6 hours after picking.
two。 Sodium pyrosulfite
Soak it in 0.01% sodium pyrosulfite water for 30 minutes, drain it, put it into a plastic bag and store it in a plastic bag. Under the condition of 10 to 15 ℃, the fresh-keeping effect is better.
3. Kinetin
Soak in 0.01% 6-aminopurine solution for 10 minutes for 15 minutes and then store it routinely.
4.B9 spraying
Place the mushrooms on a clean plastic film, spray them evenly with 0.1% Bijiu (B9), and spray again after 3 to 5 minutes. Then store it in a dark place in a plastic bag, which can be stored for 8 days under the condition of 5: 10 ℃.
