Master the methods of topdressing, fresh-keeping, processing, storage and transportation of edible fungi.
With the acceleration of the pace of life and the improvement of the quality of life, convenient, clean, small-packaged fresh mushroom products are welcomed by consumers and have become a bright spot in the development of market sales. So, how to do a good job in the preservation, processing, storage and transportation of fresh edible fungi? the procedures and technical requirements are introduced as follows:
Once the fresh mushrooms are harvested in a low temperature environment as soon as possible, they must be neatly placed in a small container and sent to the cryogenic workshop for finishing as soon as possible. The volume of the container is 40 cm × 28 cm × 16 cm (length × width × height). It is shaped like a turnover box, a solid plate at the bottom, a round hole with a preset diameter of about 2cm / 3cm, and an indented corner block in the lower four corners to facilitate multi-layer code height. Fresh mushrooms are discharged from head to head when harvested, so as not to connect them from end to end, so as to avoid pollution. The temperature in the cryogenic workshop is 1 ℃ ~ 3 ℃. The ordinary constant temperature cold storage can be used after transformation, and other packaging containers can be stored in the workshop to cool it down thoroughly. After the fresh mushrooms are moved into boxes into the workshop, they should not be placed separately, and no more layers should be high, so as to fully cool the mushroom body, which is especially important for fresh mushrooms harvested when the air temperature is higher than 15 ℃. Finishing tools are: thin stainless steel knife or bamboo knife, as well as small packaging sealing, packing and other equipment.
Carefully arrange the fresh packaging, first cut off the base of the fresh mushroom with a knife, remove the soil, base materials and other sundries, and remove the scales too often, generally without washing, otherwise shorten the shelf life of the product. When the internal temperature of the mushroom body is below 3 ℃, it can be repackaged. Generally available foam texture lunch box style, made of about 5 cm high about a single box, each box about 150 grams of fresh mushrooms. If the sale of plastic packaging is prohibited, paper boxes can be customized. Coprinus comatus is generally suitable for packaging of 16cm × 10cm × 4cm (length × width × height, the same below); Agaricus blazei Murrill is suitable for 15cm × 10cm × 6cm; Pleurotus ostreatus and poplar mushrooms are suitable for 16cm × 8cm × 4cm. Determine the discharge mode according to the shape and size of fresh mushrooms, and then wrap the fresh-keeping film. Put the small box into the foam fresh-keeping box, each box can contain 36 boxes, and the transparent tape can be sealed.
In the process of storage and transportation, attention should be paid to cooling for short-term storage and transportation. ice cubes or refrigerated vehicles can be used to cool and keep fresh, and the temperature can be controlled at 1 ℃ ~ 3 ℃.
