(2) Pepper preservation method. First dry the peanuts, remove the impurities, then put them into a plastic food bag without holes, put a few pieces of chopped dried chili slices inside, seal them, and place them in a dry and ventilated place. In this way, peanuts will not be bad within a year, so as to achieve the purpose of moisture-proof, mildew-proof and insect-proof.

(3) blanching and drying. Blanch the peanuts in boiling water, take them out quickly, stir with salt while hot, then dry. In this way, you can kill the bacteria on the surface and have the effect of preventing insects and mildew.

(1) it is best to store raw peanuts in a ventilated and dry place. Raw peanuts should be dried in a container for 2-3 days, then cool, packed in plastic food bags, sealed tightly, refrigerated in the refrigerator, and can be stored for 1-2 years.

(2) peanuts should not be refrigerated, but should be refrigerated. When the temperature is controlled at 4 to 10 degrees, the oil in peanuts is theoretically solid, and the metabolism of peanuts is very slow, and the acid value almost does not rise; but if the temperature is lower than 0 degrees, freezing injury may occur and affect the taste. If the content of non-hydrated phospholipids is also very high after oil extraction, the relative humidity should be controlled below 85%. Under these conditions of temperature and humidity, aflatoxin will not be produced, and the acid value of peanuts will not increase significantly. It's no problem to be able to store it for a few months.

3. Can raw peanuts be eaten when they sprout?

You can eat it. Because peanut sprouting is like mung bean sprouting, it is edible, and peanut sprouts are nutritious, but make sure they don't rot. In southwest Anhui, when new flowers grow in the soil every year, some of them will sprout, and people regard them as delicacies. In some cities, small packages of peanut buds sell very well in vegetable supermarkets, and restaurants also have peanut sprouts, but this refers to sprouting about an inch long without decay.

When we buy peanuts, we see germinated peanuts or peanuts stored at home. In fact, we do not know which day it germinated, but can germinate, indicating that peanuts are in a moist and watery state. Such peanuts are prone to sprouting and growing mildew. Infected with Aspergillus flavus. . Therefore, sprouting is not toxic, but when sprouting is accompanied by mildew, it will form toxic aflatoxin, which can cause cancer and cannot be eaten. Germination and mildew growth occurred under the common condition of high water content of peanut. Therefore, although there is no causal relationship, germinated peanuts are more likely to be infected with aflatoxin. Therefore, when buying peanuts, do not eat germinated peanuts or peanuts stored at home, but eating a few peanuts is not immediately poisonous.

Therefore, if it is artificial sprouting, there is no problem. You can eat it. But if it is caused by mildew and sprouting caused by moisture for too long, it is absolutely not allowed to eat.

Had better not eat, because live insects may also have mildew, produce some carcinogenic aflatoxin. Aflatoxin (AFT) is a class of compounds with similar chemical structure, all of which are derivatives of dihydrofuran coumarin. Aflatoxin is a secondary metabolite mainly produced by Aspergillus flavus and parasitic aspergillo. the probability of aflatoxin in food and feed in hot and humid areas is the highest.

They exist in soil, animals and plants, all kinds of nuts, especially easy to pollute peanut, corn, rice, soybean, wheat and other grain and oil products. They are the most toxic mycotoxins and do great harm to human health.

4. What should be done after giving birth to worms?

(1) if there are not many peanuts, put the peanuts in a cool and ventilated place, let the worms climb out slowly, and then sift through them so that they can continue to eat.

(2) if there are not many peanuts, you can put the peanuts in a plastic bag, tie the mouth of the bag tightly, put it in the freezer, take it out 48 hours later, kill the worms in the peanuts, and then sift them for further consumption.
