Occasionally, I saw someone ask whether purple pepper is edible or not. During my internship, I followed my teacher in the plantation for more than a year to cultivate, breed and study purple pepper. In addition, there are many misunderstandings about the edible and nutritional value of purple pepper. Today, I would like to give you a brief introduction to purple pepper.

The purple pepper is purple because anthocyanins are synthesized and accumulated in the body, which can show purple in the cotyledons, true leaves and stems at the young plant stage, as well as on the stems, leaves, flowers and young fruits at the adult stage, but the fruit shows normal red after the fruit is ripe.

The biggest nutritional value of purple pepper is that it is rich in anthocyanins, which is the biggest difference between purple pepper and ordinary green pepper. Anthocyanins are powerful antioxidants that protect the body from harmful substances called free radicals, while anthocyanins can also enhance vascular elasticity, improve circulatory system and enhance skin smoothness, inhibit inflammation and allergies, and prevent cancer. The contents of vitamin C, carotene and mineral elements in purple pepper are also very rich, which have high nutritional value and edible value.

Some people on the Internet say that purple pepper is only a kind of ornamental pepper and cannot be eaten. This is a misunderstanding of purple pepper. Purple pepper is not only edible, but also compared with ordinary green pepper. Purple pepper has high vitamin C content in fruit, unique flavor and taste, and purple pepper leaves contain more amino acids, minerals and vitamins than ordinary green pepper leaves. The edible value is also very high, and the taste quality is significantly higher than that of ordinary green pepper.

Some people say that purple chili peppers taste light and not spicy, which is only an one-sided view. Purple chili peppers, like conventional chili peppers, can also be divided into spicy and non-spicy peppers. Not all purple chili peppers are not spicy. On the contrary, some varieties of purple chili peppers have a very high capsaicin content, which is much hotter than ordinary green peppers. Some purple chili peppers are not hot. I summed up the reasons. The first reason may be that the hybrid offspring showed the appearance of purple pepper, but capsaicin decreased. Second, under natural conditions, purple pepper and common green pepper carried out pollen exchange and fusion at flowering stage due to the influence of external natural factors, and inherited the external characters of purple pepper, but the capsaicin content was not stably inherited.

Although the nutritional value of purple pepper is much higher than that of ordinary green pepper, it has not been popularized and planted on a large scale due to various reasons, and in some places it is only a small area demonstration, or a family balcony as an ornamental. So it is difficult to see purple pepper on the market at present.

Here, I hope you can get out of the misunderstanding of purple chili, in-depth understanding of purple chili, accept purple chili, taste purple chili, I am sure it will give you an unusual feeling.
