It's hot and humid, and it's time for crisp asparagus! Asparagus is known as the "king of vegetables" because it is rich in nutrients such as cellulose, nicotinic acid and folic acid, and has long been an indispensable ingredient in Chinese and Western cuisine.

However, it is easy to "reverse bitterness" with the extension of the shelf life, "firewood" asparagus, how to deal with in order to maintain the fresh sweetness of the origin, and how to select fresh asparagus? Tainan Agricultural Reform Farm provides four tips and preservation methods for identifying fresh asparagus, so that people can easily enjoy delicious asparagus.

To verify that there are four key points for observation of fresh asparagus: the basal incision should be fresh green, the tip of the shoot should be full, the scales on the stem should be emerald green or fresh pink purple, and the epidermis on the tender stem should be full and glossy; if one of them is dry and brown, or there is an obvious gap between the scales, it is a sign of asparagus losing water for many days. Asparagus with too much water loss will also appear wrinkles, softness and drooping head near the tip.

Tainan Agricultural Reform Farm says that because of the subtropical environment and the high temperature in Taiwan, if the fresh asparagus harvested is not cooked immediately, it will continue to grow, and if it is placed horizontally in the refrigerator, it will not be easy to prepare, so if there is enough space in the refrigerator, it can be stored in an upright way. In addition, to keep the asparagus fresh, cover the base of the asparagus with a wet household paper towel, plus plastic wrap or cling box to keep the asparagus from contact with the air. The asparagus can remain green for 2 to 3 days.

If the ambient temperature is not low enough, or if the storage time is long, asparagus has aging or fibrosis, there is also a remedy, as long as soak the base of asparagus for 5 minutes before cooking, so that the asparagus can not be easily broken, the fibrotic part and old skin can be easily removed, and then the crisp asparagus can be removed.
