Then pour the jujube into the pot, immerse it with sugar solution, continue to boil for 60 minutes, and keep stirring to make the jujube heated evenly. After the sugar and acid solution is boiled, the cooling sugar and acid solution is gradually added to promote the jujube meat to permeate sugar and absorb acid. Cook until the jujube is transparent, and when you can clearly see the jujube kernel, stir and add the right amount of sugar to the pot and continue to cook for 15 minutes until the sugar concentration is 58%.

5. Soak

Pour the cooked sugar jujube and sugar solution into a clean tank immediately and soak for 24 hours to make it continue to absorb the sugar solution to a saturated state.

6. Baking

Put the soaked sugar jujube into the baking plate, put it in the baking room of 65-68 ℃, bake for about 24 hours, that is, the crystal jujube.
