Processing of bagged jujube

Scorched dates, also known as crisp dates, are crispy and have a unique flavor.

Process flow: material selection → soaking → coring → baking → coating → cooling → packaging.

Main technical points:

1. Selection of materials. Choose big fruit, compact, disease-free high-grade jujube as raw material.

2. Soak and wash. Wash the dates in a warm water bath and allow them to swell.

4. Bake. Pour the dates into a special drying cage (cylindrical net cage 80cm long and 25cm in radius). There is an iron shaft in the center of the cage to support the rotation of the jujube cage. The volume of the jujube accounts for about 2/3 of the total volume, about 40 revolutions per minute, and generally 30~40 minutes can bake a cage.

5. Sugarcoat. At the end of the baking date surface, according to the ratio of 20:1, spray on the just-boiled syrup (3 parts white sugar, add 1 part water, boil to 120℃), spray while mixing, must spray evenly, so that the jujube surface to form a layer of white sugar frost.

Cooling and packaging. Spread the dates in a dry place, cool them and then pack them in double polyethylene bags.
