Processing of candied straw mushroom and mushroom
First of all, it is necessary to understand the tissue structure and chemical composition of edible fungi such as grass shavings and mushrooms. This kind of edible fungus has large water content, loose and fragile tissue, and it is easy to brown the surface in the processing process to affect the color of the finished product. Therefore, the processing technology should consider the above characteristics, and the processing technology is as follows:
1, raw material selection: pick out rotten, sick and chromatic aberration, aged straw mushrooms and mushrooms that open umbrellas, and try to get fresh materials.
2. Pretreatment: after the raw materials have been selected and arranged, the color protection measures should be taken promptly and soaked in 1% salt water, or soaked in 0.1% sodium bisulfate for 4 hours for 6 hours.
3. Hardening treatment: prepare 0.1% calcium dichloride solution to soak for 6 hours for 8 hours and then set aside.
4. Sugar solution preparation: 40% sugar solution, and the amount of granulated sugar is 0.6 times that of raw materials. 0.2% citric acid, 0.5% salt and 0.05% potassium sorbate are added to the sugar solution, and the mixture is boiled and poured into the edible fungus raw material while it is hot. Because the raw material is fragile and can not be boiled directly with the sugar solution, it can only be impregnated many times.
5. Sugar penetration: the method of multiple sugar penetration. Only heat and concentrate the sugar solution separately every day, gradually increase the sugar content, and let the raw materials absorb sugar gradually, because the raw material is looser and easy to absorb sugar. The production cycle can reach the goal of sugar penetration in 5-7 days, and the final sugar content is up to 60-65% in terms of soluble solids.
6. Baking: remove candied edible fungi from the sugar solution and spread them in a baking plate and dry them at 65 degrees Celsius. The final product has a moisture content of 25% 26%, and the drying can be stopped.
7. Packing: the film bag is packed in a small quantity of 50g / 100g, and the coat is designed for exquisite carton. The product is sweet and sour and delicious, with the fragrance of edible fungi, without losing the health care function of edible fungi.

Types and preparation of Culture Materials for volvariella volvacea
The raw materials needed for volvariella volvacea cultivation come from a wide range of sources. At present, the most commonly used are rice straw, wheat straw, waste cotton and cottonseed hulls. The waste of some edible fungi can also be used to cultivate straw mushrooms. 1. Choose golden, mildew-free dried straw and use it in the sun for 1 or 2 days to prevent the emergence of umbrellas or other miscellaneous bacteria during cultivation. There are generally two ways to treat rice straw. one is to cut the straw into about 5 cm long, then soak it in 3% lime water for 1 to 2 days, and then add 20% 25% dried pig manure or dried cow dung to make it.

Production Technology of preserved Straw Mushroom
1. Material selection and treatment. Select straw mushroom with full body, no umbrella and no mechanical damage, immediately after harvest, put it into 0.03% sodium pyrosulfite solution to deal with 6Murray for 8 hours (hours), then rinse with clean water. 2. Blanching and hardening. Blanch the treated volvariella volvacea in boiling water for 2--3min (minutes) to kill the enzyme activity, remove immediately after blanching, cool in cold water, remove after cooling, and soak in 0.5% murmur1% calcium chloride solution for 10 hours (hours).
