2.2 preparation method of tortoise plate

2.2.1 the raw tortoise plate will kill the live turtle, take its web to remove the tendon blood, wash and dry or dry into the blood plate, the quality is the best. Then soak the blood plate in clean water for 20 days in summer and 40 days in winter without changing water, so that the skin and fascia rot, and when it is easy to separate from the tortoise plate, wash it with clean water and become a raw tortoise plate when it is exposed to no smell in the sun and night. If soaked in 6.5% sodium hydroxide solution, change the lye once a day, 3-5 days to remove carrion, fish out and dry. In recent years, the quality of tortoise plate processed by advanced yeast method is very good, and the processing time is greatly shortened. The method is to first soak the tortoise plate in water of about 23 ℃ for 2 days, after dewatering, add the canister liquid of Saccharomyces cerevisiae, which accounts for 20% of the tortoise plate weight, add water to soak the tortoise plate and stir it well, foam the upper layer of the solution after 2 days, rinse it with water 5 times after 10 days, and dry until there is no odor to become the raw tortoise plate.

2.2.2 the vinegar turtle board will be heated in the saucepan with martial fire, add the washed raw tortoise plate, stir-fry until crisp and the surface is yellowish, sift out the sand, soak it in vinegar while it is hot, remove it to dry or dry. The amount of vinegar used in 100kg tortoise plate is 20~25kg.

2.3.1 proportion of raw materials: tortoise plate 10kg, rock sugar 0.5kg, yellow rice wine 0.3kg, soybean oil 0.15kg.

2.3.2 method a) frying glue juice: put the treated tortoise plate in a copper pan and submerge it with water, heat it with low heat, keep it slightly boiling for 1-2 days, then pour out the decoction, fry it for 3 times and 5 times until the glue juice is fully fried; b) filter clarification: combine each time to remove impurities, sift and then filter with silk cotton, and add alum in stages to stir evenly, then settle and filter again. C) concentrate and collect glue: heat the clarified glue in a copper pot and concentrate it over low heat, stir continuously to prevent coking, until the glue is opaque, add other well-weighed raw materials to make it mix evenly, without showing oil flowers, and collect the glue after being concentrated to hang the flag, pour it into the gel basin and condense naturally. In order to speed up the solidification rate, 5%-10% donkey-hide gelatin can be added; d) sliced packaging: take out the solidified pieces of plastic and cut them into small pieces with a knife, dry them, and pack them for sale.

2.3.3 quality specification turtle gum color: brownish green, translucent. Specification: long 3cm, wide 3cm, thick 1cm, each piece weighs about 5g.
