First, technical introduction: China is rich in almonds, most of which are exported with raw materials, and the economic benefit is very low. This project has studied the processing methods of almond series snack food, the products are fruit-flavored sugar coating, amber, and crisp flavor, 3 types of 13 products, is a good almond health series food.

The Institute of Comprehensive Utilization of Agricultural products of Shanxi Academy of Agricultural Sciences adopts the self-designed method of peeling and debittering of almonds to make almonds peeling clean, debittering quickly and without hurting almonds. In the processing experiment of fruit-flavored sugar-coated almonds, an in-depth study was carried out from different aspects, such as preheating temperature of sugar coating machine, sugar melting conditions, sugar cover technology, temperature change requirements and so on. Many kinds of links such as sugar cooking and frying of amber almonds were tested repeatedly, and the best technical conditions of various processing links were obtained. microwave ripening is the first to use microwave ripening, and compared with the traditional far-infrared ripening process, the results show that microwave ripening is not only fast and low energy consumption, but also the ripening effect is better than the traditional far-infrared ripening process. The effects of more than 30 kinds of domestic and foreign different brands of flavors needed in the processing of this project were compared, and the varieties suitable for baking almond food were selected to form a whole set of almond snack food processing technology.

The project already has the conditions for industrialization. It is suitable for almond producing areas in northern China or economically developed areas with convenient transportation.

The project has two national products, "A large almond and its processing technology" and "sugar-coated almond and its preparation method".

Second, economic benefits: China has an annual output of more than 24000 tons of bitter almonds and more than 3800 tons of almonds, which is rich in resources. at present, almond foods on the market are mainly almond dew, almond cream and a small amount of canned almonds for side dishes. This project has developed more than ten kinds of almond foods in three categories with huge market potential and broad prospects for popularization and application.

To build a small almond processing enterprise with an annual output of 120 tons of bitter almond products and 90 tons of large almond products for kernel use, with a total output value of 9.8 million yuan and an annual profit and tax of 2.75 million yuan. This production scale can only transform 0.7% of the total raw materials of almonds, and the economic benefit is very considerable.
