Production technology of mushroom beverage
1. Ingredients
420 grams of mushroom or dried mushroom feet, 150 grams of milk powder, 160 grams of sugar, 50 grams of glucose, 46 grams of citric acid, 2 grams of sorbic acid, 0.5 grams of food pigment carmine, 2 milliliters of edible essence, 10 liters of purified water.
2. Production
(1) the defective products and mushroom stalks during the production and processing of mushrooms are washed away from the sediment and impurities in 0.05% sodium sulfite solution and removed. Then soak in 0.1% sodium sulfite solution to protect color, then rinse with water, and then dry or dry.
(2) pour the above mushrooms or mushroom feet into an aluminum pot, add 3 litres of purified water, boil for 30 minutes, filter with multi-layer gauze, take the filtrate, add water to make up 3 liters, and then add glucose, sugar, milk powder, and the filtrate to mix evenly, then filter the original solution.
(3) wash all kinds of containers with water, then disinfect them with 0.2% potassium permanganate or 0.3% bleaching powder, and finally rinse with purified water.
(4) pour 1 liter of purified water into the disinfection container, then add citric acid, sorbic acid, essence, pigment, etc., dissolve, pour in the original solution, mix well and then bottle.
(5) fill each bottle so that the liquid level is 0.5-0.6 cm away from the mouth of the bottle and seal while it is hot. Sterilize at 100℃ for 20 minutes and store it after cooling.
If corn and mushrooms are added together, corn and mushroom beverages can be made by:
(1) wash corn and corn beard. Soak the corn in alkali water for 3-5 hours, remove and drain, put into the pan, stir-fry until foamy. The corn should be cut into 1-1.5 cm long and baked for a short time.
(2) break the fried corn kernels into 8-14 pieces.
(3) mix mushroom powder with the above two raw materials and rinse with boiling water.
