Modified atmosphere storage is simple and controlled atmosphere storage, which can keep mushrooms fresh and tender without opening umbrella within 3-5 days, there is basically no browning, and the water loss rate is less than 1%. At present, it is generally packed in breathable plastic film bags, which maintain 1% oxygen concentration and 10%-15% carbon dioxide concentration in the bag, which can keep mushrooms white within 4 days and have good freshness.
Cold storage and low temperature can keep mushrooms fresh and high quality. During storage and transportation, the temperature is kept at 0 ℃ ~ 3 ℃ and the relative humidity is 90% ~ 95%.
The quality and flavor of mushroom can be maintained for a long time when the mushroom is reduced from normal temperature to-40 ℃ ~-30 ℃ within 30 ~ 40 minutes, and then frozen at-18 ℃. The quick-freezing process is as follows: raw material acceptance, washing, color protection, rinsing, manual classification, air ironing, primary cooling, secondary cooling, quick freezing, selected package, frozen storage and transportation
Keep the mushrooms fresh in salt water and immediately put the mushrooms in 19 waves of salt solution. A few days later, add appropriate amount of refined salt to maintain 19 waves of salt solution. It can be sealed and kept fresh after 4-6 days, when the weight and pH are stable.
