Materials: 3 prawns, 1 Youtiao, 4 slices of lettuce, 1 spring onion.

Seasoning: a little flour, 1 tablespoon cooking wine, 5 cups of stock, 1 teaspoon salt, a little pepper.

Production method:

1. Peel the prawns, remove the mud sausage, rinse the mucus with flour, rinse with clean water, wipe dry, and then slice thin.

2. Cut Youtiao into pieces, deep-fry in the pan, remove and drain, spread in a bowl, shred lettuce, add chopped onions, and spread thin slices of prawns on top.

3. Bring the seasoning (2) to the boil, pour in, blanch the slices of prawns in boiling soup, and then eat while they are hot.

Key tips:

1. Prawns must be fresh to make this soup, otherwise it smells fishy.

2. The head of prawns is very big, but it is a pity to lose it. You can cook the broth with fried wine and leave it for other purposes, but it is not suitable to be added to this soup unless it is mixed with chicken bone soup and filtered.

3. Besides prawns, fresh fish fillets can also be eaten in the same way.
