3. Pickling: take part of the fine salt, smear the chicken body, marinate in the tank for 12 hours and 24 hours (the curing time varies according to the season, long in winter and short in summer).

4. Stewed chicken: take out the pickled chicken, boil it in a boiling water pot for 5 minutes, put various seasonings in a gauze bag, put into the old chicken soup, and then continue to boil the chicken. First cook the chicken over high heat for 15 minutes, then change to simmer for about 30 minutes to get out of the pot.
