Raw material formula chicken 10 refined salt 1 kg soy sauce 750 g white sugar 500 g Shao wine 350 g spring onion 500 g ginger 50 g fennel 25 g cinnamon 25 g orange peel 25 g cloves 5 g Amomum villosum 3 g.
Production method 1. Material selection: choose healthy and disease-free live fat chicken as the main raw material, and the chicken in that year is the best.
2. Slaughter: slaughter the chicken, drain the blood, soak the chicken in hot water, clean the hair, open the gut, remove the internal organs and rinse with clean water.
3. Pickling: take part of the fine salt, smear the chicken body, marinate in the tank for 12 hours and 24 hours (the curing time varies according to the season, long in winter and short in summer).
4. Stewed chicken: take out the pickled chicken, boil it in a boiling water pot for 5 minutes, put various seasonings in a gauze bag, put into the old chicken soup, and then continue to boil the chicken. First cook the chicken over high heat for 15 minutes, then change to simmer for about 30 minutes to get out of the pot.
