Production method 1. Material selection: choose the rooster of the current year or the hen that has been eliminated for 1 or 2 years. After slaughtering, bristling and eviscerating, soak in clean water for 1-2 hours to remove the blood stain.
2. Plastic surgery: the white-striped chicken breaks the chicken leg with a stick, cuts the cartilage on both sides of the rib bone with scissors, and inserts the claw into the chicken belly, and the chicken head is pressed under the left wing, which is called pan chicken.
3. Boil: first put the white-striped chicken in a boiling water pan and cook for 10 minutes for 15 minutes to restore the tightening. Remove and rinse. Then, boil the ingredients together with the chicken. In about 90 ℃ of water, the tender chicken will be boiled for 1-2 hours, and the old chicken will be cooked for 3-4 hours.
4. Fumigation: sawdust is used as fumigant. Put the cooked chicken into the fumigator, sprinkle sawdust and sugar on the iron plate at the bottom of the furnace, then heat the iron plate, then smoke and close the fumigator. Smoke for 15 minutes, when the smoke turns white and the chicken is red, you can start the pot. Brush another layer of sesame oil to make it brighter.
