Fresh storage
Fresh Pleurotus ostreatus can be stored fresh because it is difficult to harvest fresh mushrooms in a short period of time due to the influence of the market. The storage time of fresh Pleurotus ostreatus at room temperature is greatly affected by temperature and air humidity. When the room temperature is 3 ℃ ~ 5 ℃ and the air relative humidity is about 80%, the fresh mushrooms can be stored for a week. When the amount of mushrooms is small, Pleurotus ostreatus can be sealed in a jar filled with a small amount of cold water, and the temperature can be stored for about a week even if the temperature reaches 15 ℃ ~ 16 ℃. Pleurotus ostreatus can also be completely immersed in cold water, but the water must be clean and hygienic, and the iron content in the water should be less than 2 mg per liter, so that Pleurotus ostreatus will not turn black.
Cold storage
Cold storage refers to a fresh-keeping method stored at a temperature close to 0 ℃ or a few degrees higher, but the lower the temperature, the better. Cold storage can be carried out in the freezer or freezer, the air temperature in the box should be checked frequently in the process of refrigeration, and the storage time should be controlled within 7 days.
Frozen preservation
The fresh Pleurotus ostreatus was treated in boiling water or steam for 4-8 minutes, cooled quickly in 1% citric acid solution, drained, packed in plastic bags and stored in cold storage. When the quantity is small, it can be stored in the refrigerator and can be kept fresh for 3 to 5 days.
Controlled atmosphere storage
The picked fresh mushrooms are still breathing, absorbing oxygen and releasing carbon dioxide. Properly reducing the concentration of oxygen in the environment and increasing the concentration of carbon dioxide can inhibit the respiration of fresh mushrooms and prolong the shelf life of Pleurotus ostreatus. Pleurotus ostreatus can tolerate 25% carbon dioxide at low temperature. In the controlled atmosphere room, there is a process of reducing oxygen and increasing carbon dioxide, and the shorter the oxygen lowering period, the better, so that the stored mushroom can get rid of the high oxygen environment as soon as possible and obtain the best atmosphere control effect.
Chemical storage
The main chemicals that can be used to store Pleurotus ostreatus are 0.1% sodium pyrosulphite, 0.6% sodium chloride, 4 mg triacane solution per liter, 50 mg penicillin solution per liter, 0.05% potassium permanganate solution, 0.1% oxalic acid and so on. The specific method is: first clean up the fresh Pleurotus ostreatus, soak it in the medicine solution for 1-5 minutes, then remove and drain the water, separate it into a 0.03 mm thick plastic bag (polyethylene), and tighten the mouth of the bag for storage.
