It is a popular beverage in the international market. Lentinus edodes instant tea is the addition of Lentinus edodes with unique flavor in the production process of instant tea, which significantly increases the health care function of tea without losing its due flavor; it can not only keep instant dissolving, no residue, rich and easy to adjust, but also brew alone, and can drink with milk, fruit juice or honey, sugar, etc., deeply loved by consumers. Instant tea is a kind of solid beverage which is extracted and concentrated from the effective soluble matter which determines the color and flavor of tea broth. The production method is introduced as follows:

I. Raw material formula

Lentinus edodes pulp 8%, tea pulp 14%, maltodextrin 18%, fine sugar powder 77%, citric acid 1.6%, vanillin 0.8%.

Second, the production method

1. Choose fresh or dried mushroom stalks and frozen mushroom stalks without mildew and rinse quickly in purified water under certain pressure. Then cut the handle of Lentinus edodes into thin slices or pieces. Its length is less than 5mm, the ratio of dried mushroom to water is 1 ∶ 10, the ratio of fresh mushroom to water is 1 ∶ 5, and the ratio of frozen mushroom stalk to water is 1 ∶ 6. The filtrate is extracted and filtered for 3 times and concentrated.

two。 Green tea or black tea (tea stalk, tea powder) was extracted with water in the proportion of 1 ∶ 8. When the water is boiled, pour in the tea, soak and boil at 100 ℃ for 5 minutes, then quickly drop the temperature to below 70 ℃, and filter in time to be the first extract. The filter residue was extracted for the second time with the water consumption of 1 ∶ 4, and then extracted with enzyme solution, filtered, combined with twice extraction solution, concentrated and set aside. Or adopt the closed reflux method.

3. First, mix the solid ingredients evenly, then add Lentinus edodes pulp and tea pulp in proportion, stir fully and evenly, and use a swing granulator for granulation. It is required to dry for 25 minutes under a vacuum of 40 KPA and 50 minutes at 60 ℃. Then input the centrifugal spray dryer for spray drying, the temperature is 90 to 100 ℃, the water content is less than 13%, and the finished product is quantified by vacuum packaging machine.
