2. Drying method
(1) Raw material treatment

(2) Raw materials on the machine
The mushrooms picked on the same day should be dried on the same day, and the fresh mushrooms should be packed into a sieve rack. When the temperature in the machine rises to 40 ℃-45 ℃, spread the mushroom sieve rack into the dryer.
(3) drying temperature
Mastering the temperature is the key to the drying technology. Forced ventilation, the temperature can be gradually increased from 40 ℃ to 60 ℃, such as natural ventilation, 35 ℃-60 ℃. The temperature should rise slowly, and it is generally appropriate to dehydrate and dry at the evaporation rate of 6% per hour. If the temperature is too high, strengthen the surface evaporation intensity, the internal diffusion can not keep up, the interior of Lentinus edodes is gelatinous, and the central part of the mushroom umbrella is often boiled black, reducing the quality of the product.
(4) ventilation and exhaust
In order to achieve a certain degree of air exchange in the drying process, the wind speed at the wet tail of the drying equipment should reach 0.5m / s. At the same time, we should pay attention to the relationship between temperature and ventilation.
