Harvest at the right time requires that all fruits turn dark red to harvest. In North China, harvest is usually from cold dew to frost. If small arch shed cultivation or plastic film mulching cultivation is adopted, harvest can be appropriately early. If planting is late, harvest can be delayed slightly, but harvest must be completed before frost comes. Otherwise, after frost, pepper dried products uneven coloring, reduce product quality. The harvest of Wangtian pepper generally adopts two methods: seedling pulling or seedling cutting. After harvest, the pepper seedlings should be placed flat in the field for drying for 3~4 days. In case of rain during drying, they should be dried again for 1~2 days before transportation.

Whole seedling drying refers to drying pepper seedlings and peppers together to reduce the water content of pepper from about 50% of the original harvest to 18%~20%, and not moldy, deteriorated, faded or broken during the drying process. The advantages of whole seedling drying are that the pepper fruit is still connected with the stem, branch and pepper handle of the plant, while the stem, branch and pepper handle of the pepper have no cuticle membrane on the surface of the pepper fruit, so that the water in the pepper fruit can be distributed to the pepper plant through the conducting tissue, so that the dehydration speed of the pepper fruit is accelerated; In addition, it can avoid the heat generated by the respiration that often occurs in the direct accumulation and drying of pepper fruit, which leads to the harm of mildew and blackening of pepper fruit. Specific drying method can be used hanging seedlings drying method, that is, the use of houses and courtyard walls, tied iron wire or rope, but also in the tree and wooden stakes between the iron wire or rope. Bind every 10 chilli plants at the base with rope, put them on iron wire or rope for drying. The drying point should be far away from the highway to avoid dust and waste gas pollution. Generally, it can be dried for 15~25 days. When shaking the chilli seedlings with hands, you can hear the sound of chilli seeds hitting the chilli wall, so you should end the drying of the whole seedlings, pick the chilli in time according to the requirements of the purchaser, and enter the drying stage of pepper fruits.

Drying pepper fruit Put the picked pepper fruit on reed mat, tarpaulin cloth and non-toxic plastic film to dry in time. The thickness of pepper spread should not exceed 10cm. During drying, stir 4~5 times a day (once every 2 hours) with wooden stick. In the evening, pile them up and cover them with plastic cloth to prevent dew. This drying 5~7 days can meet the requirements, in the dried fruit moisture content dropped to 12%, immediately stop drying, otherwise, too dry in packaging, weighing, loading and transportation will be broken, affecting the value of the commodity.
