(4) Cook: put the jujubes in a pot of boiling water, cover and cook for 12-15 minutes, stirring frequently. All the well-cooked dates are sunk at the bottom of the pot. When cooking jujube, master a small number of times, generally boiled jujube about 25 kg each time. Baking crystal drying: the cooked dates are first put on a special baking pan for one day. The jujube plate is a bamboo-wood structure, 2.7 meters long and 1.3 meters wide, each with about 50 kilograms of jujube billet. After drying for 1 day, the jujube billet was baked on the oven for 1.5-2 hours. After drying, baking again, if the weather is clear, after the second baking will no longer bake, the sun can dry for more than 10 days. In case of cloudy and rainy days, it should be baked repeatedly until dry. Bake the fire evenly, cover the jujube plate with straw mats, and turn the dates every 15 minutes to prevent scorching. When drying dates, do not immediately exposure, at first can be covered with grass curtain, preheating and then uncover, so as to avoid jujube fruit wrinkling too quickly, jujube skin appears hard shell or woolen flowers.
