Quick-freezing method of peach

If stored in cold storage, the processing period can be longer, but the chilling injury of peaches should be prevented. General white peach to Okubo, yellow peach to Alba is better. Cut half and enucleate: cut in half along the suture and peach out the core, and the fruit bowl is preserved in clean water.

Peeling: heat it to about 95 ℃ with 3% n310h solution, soak it in a fruit bowl for 45 seconds, rub the skin in cold water, put in 2% citric acid solution, neutralize the residual alkalinity, and then rinse with clean water.

Pickling: soak the cleaned peach slices in 1% ascorbic acid solution and soak 15~30min in order to increase the content of vc in peach slices and protect color.

Packaging: put the peach slices into a carton and pour into the sugar water with a concentration of 40%. The ratio of peach slices to sugar water is 6:5.

Quick freezing: the packed peach slices were sent to the freezer, frozen at about-25 ℃, and stored in-18 ℃ freezer.
