I. Raw material formula

Radix Astragali 30k, Ganoderma lucidum 30kg, Codonopsis pilosula 15kg, Atractylodes macrocephala 45kg, liquor l00kg, sugar and essence.

II. Technological process

Purified water → plus sugar → heating purification → plus acid → cooling filtration

Raw material → processing → soaking → filtering → blending → sterilization

Finished → packaging → cooling → sterilization → filling → filter → cooling

III. Operation points

1. Soak: slices of Radix Astragali, Ganoderma lucidum, Codonopsis pilosula and Atractylodes macrocephala, packed with white fine cloth, soaked in high-quality base wine and cold soaked at room temperature for 2030 days. After being pressed and filtered by a cotton cake filter, the wine can be mixed. The base liquor used is fragrant Daqu. After soaking, the mixed wine has pure flavor, natural medicinal aroma, harmonious taste, good taste and fresh fragrance.

2. Dispensing: pay attention to the blending of sugar content, alcohol content and drug dosage.

(1) the sugar content will dissolve the white granulated sugar in the purified water, heat it indirectly and keep it at a constant temperature for about half an hour to make it fully dissolved. Then filter with multi-layer gauze, remove impurities, quickly cool to about 35t, and mix.

(2) the alcohol content should be appropriate, which should not only highlight the aroma of wine, but also not cover up the aroma of Ganoderma lucidum and astragalus.

(3) the drug concentration and taste should not be too strong, but the efficacy of the medicinal wine and the stability of the wine should be ensured.

(4) the chromaticity should keep the natural color of the soaked wine, and keep the color and taste of the wine in harmony.

3. After secondary sterilization, steam sterilization is used in the sandwich pot, filtered and bottled, and then heated with steam sterilization trough. By using the method of secondary sterilization, the wine can be clarified and transparent, the stability of wine quality can be maintained, and the shelf life can be prolonged, which can be preserved for more than 8 months. No turbidity, no precipitation, no discoloration.

IV. Quality standards

1. Sensory indicators:

Color: clear and transparent, orange-red, no suspended matter, no precipitation

Aroma: pure wine, moderate smell of medicine, perfect harmony.

Taste: mellow and soft, sweet and sour delicious, refreshing and clean entrance, yuan peculiar smell.

2. Physical and chemical indexes:

Alcohol content (solubility) 20 sugars (glucose, g/100ml) 20 total acids (acetic acid g/100ml) 0.3.

3. Microbiological indicators:

In line with the relevant regulations of medicinal wine.
