There are many varieties of Wuyi rock tea with different characteristics, some of which are obvious and some have little difference. Therefore, it is not easy to distinguish between varieties, and it takes long-term observation, discrimination and comparison to make the difference clear. The method of discrimination is mainly from the branches, stems and leaves of tea trees, the shape and flavor of finished tea, and the taste of tea. The differences in tea branches and leaves are relatively easy to distinguish, and the differences in aroma types are distinguished by the sense of smell. Zhang Yuan of the Ming Dynasty said in the record of Tea: incense has true fragrance, orchid fragrance, delicate fragrance and pure fragrance. Each one in the table is pure fragrance; if it is not raw or ripe, it is fragrant; when the fire stops, it is called orchid incense; before the rain, it is really fragrant; and there are fragrances that contain incense, leak incense, floating incense and ask incense, all of which are not correct. Rock tea first focuses on "rock rhyme", paying attention to "fragrance, clearness, sweetness, life" and "throat rhyme", "bottom of mouth", "cup bottom fragrance" and so on. A general introduction to the characteristics of several major varieties is as follows:
Daffodils. The tree is tall, with upright branches, with a maximum height of 3 meters, a crown of 5 meters and a trunk of 11 centimeters. There are three kinds of leaves, those with large leaves germinate early, those with thinner leaves germinate later, and those with leaves near the garden germinate the latest. The longest leaf is 11 cm long and 8 cm wide; the average leaf is 10 cm long and 5 cm wide. The leaf surface is smooth, dark green with glossy light, the leaf vein is thick and hidden, for 8-12 pairs, the edge is serrated deeply. Early flowering, many flowers, large flowers, red and white is not easy to bear fruit. The finished tea strip is fat-shaped, the color is green, brown and oily, with precious color, and some leaves show sand grains on the back. Fragrant, sharp, clear and long, with the fragrance of orchids. The tea taste is rich and mellow, the throat rhyme is obvious, Huigan is refreshing, and the soup color is orange. Resistant to brewing, the bottom of the leaf is soft and bright, the edge is bright red. But it doesn't last long. Cinnamon: the height of the tree is 1.6 meters, the crown is 1 meter, and the stem is 3 cm thick. The branches stretch upward and expand slightly. The branches and leaves are quite dense, the leaves are thick and crisp, the leaves are smooth, the leaf edge is turned into a tile tube, and the leaf tip is pure and oval. The veins of the leaves are thin and hidden. Strong sprouting power. There are many flowers, but small ones. The finished tea has a tight shape and a fresh bluish brown color. The fragrance is extremely sharp, with obvious cinnamon fragrance, the beautiful person takes frankincense, has the attractive feeling, the fragrance for a long time especially exists. The taste is fresh and smooth, the soup is orange and clear, the bottom of the leaf is yellow and bright, the red spot is bright, but it is not very bubble-resistant.
Oolong: oolong can be divided into big leaves and lobules. The big leaf person is as high as 2 meters, the crown is 1.95 meters, the trunk is many. The branches are slightly curved, the veins of the leaves are thin and hidden, the leaves are blunt, and the leaves are thick and brittle. The flowering period is late, the fruit is weak; the highest lobular oolong is 120 cm, and the branches and leaves are spreading. The leaves are dark green, smooth and non-luminous, the leaf shape is curved downward, and the leaf tip is round and obtuse. The main pulse is particularly obvious. The flowers are small, red and white. The finished tea has a tight and fine shape, dark green with brown color, with obvious peach aroma, thin and long fragrance, and a sense of seclusion. The emblem contains tea, which is fragrant and fragrant. Taste extremely sweet, refreshing and comfortable, thick but not thick, lively color fragrance, throat rhyme clear. The tea is clear and the soup is golden. The bottom of the leaf is soft and bright, and red dots appear. Bergamot: the height of the tree is about 1.4 meters and the crown is 1 meter. The tree is slightly expanded, the branches are soft and brittle. The leaves are large, egg-shaped, wrinkled and uneven, like pear leaves. The leaves are thick, blue-green, the leaves are thin and glossy, the main veins are thick and the lateral veins are slightly thinner. The sprouting ability is weak, and the flowers bear fruit poorly or without fruit. At the beginning of the Republic of China, this kind of tea merchant (Fang Mao Tea House) was brought to Wuyi from Anxi. Its finished tea looks fat, stout, wrinkled and shaped like spring silkworms. The color is brown and green, fragrant and clear, with obvious Sydney aroma. The taste is very strong, more sweet and has a pear flavor. The soup is dark orange and red. The bottom of the leaf is thick and yellow, the red edge is bright, and the back of the leaf is obviously sand-grained.
Odd species: also known as "vegetable tea", is one of the earliest varieties in Wuyi Mountain. The bushes are very small and the branches are thin. It is a variety of sexual breeding sown by seeds. There are many flowers and seeds for sowing. The finished tea has a tight and even appearance, iron blue with brown color, more oily, natural flower fragrance, fragrance is not strong, fine and saving, mellow and refreshing taste, obvious throat rhyme, soup color orange, yellow and clear, although the bottom is not even, it can be matched with other teas to improve the taste. Mei Zhan: the tree is tall, only slightly lower than the daffodils. The height can reach 1.6 meters, the crown 1.1 meters, the branch is quite abundant. The leaves are thick, oval, dark green, darker than cinnamon and clearer than Tieguanyin. The leaf surface is uneven, the two edges are slightly facing the sky, the tip is obtusely round and slightly longer, and the saw edge is thin and shallow, but sharp. There are many stamens, the flowering stage is late, and the flowering period is the most in the middle of December. The finished tea is relatively thick and tight, the tea is golden yellow, and the taste is strong and resistant to bubbling. The fragrant shape is sharp, but not slender enough.
