(1) technological process

(2) production method

1. Hebei Zhaozhou Xuehua pear is selected for raw material acceptance, the raw material should be fresh and full, free from diseases and insect pests, no mildew and rot, and the transverse diameter of the fruit is not less than 5.5 cm.

2. Clean water is used to remove sediment and impurities attached to the surface.

3. The core temperature of folding and peeling feeding is not less than 10 ℃. Fold the handle and peel it mechanically.

4. Cut and cut the seed nest in two halves, and dig out the seed nest and pedicle tendons.

5. Trim and remove mechanical injuries, insect pest spots, residual pericarp, calyx, etc., and soak in 1%-2% salt water to protect color.

6. Sorting is separated according to the size, color and maturity of the fruit. Remove unqualified fruit pieces such as soft rot, discoloration, diseases and insect pests, scars, etc.

7. 500ml victory glass cans are used, each of which is filled with 290 grams of snow pear. Pay attention to the neat arrangement of pear slices when canning.

8. Juice is injected into sugar juice, and the concentration of sugar juice varies according to the ratio of sugar to acid in pulp. When opening the can, the concentration of the sugar solution is 14%-18% determined by the refractometer, and a certain amount of citric acid is required to be added to the sugar solution.

9. Exhaust and seal the canned snow pear with sugar juice is sent to the exhaust box for exhaust, and the can can be sealed when the central temperature of the tank is above 85 ℃.

10. The cans after sterilization, cooling and sealing should be sterilized as soon as possible, kept in the sterilizer at 90 ℃ ~ 95 ℃ for a period of time, and then sterilized at 100 ℃.

11. Dry the cooled canned snow pear and apply antirust oil into the warehouse.
