Chinese wolfberry leaf juice 400kg, gelatin 2kg, sugar 10kg, citric acid 1.5kg, CMC-Na2 kg, ethyl maltol 0.02kg diluted to 1 ton with water.

Key points of operation

Selection and cleaning of raw materials: select the tender leaves and tips of Lycium barbarum, which requires that the tissue does not shrink and there is no moth, rinse away the sediment impurities on the surface of Chinese wolfberry leaves with water and drain water.

Blanching and color protection: put the raw materials in a 90 ℃ water bath and keep them out for 2 minutes.

Crushing and extraction: the treated Lycium barbarum leaves were crushed with 4 times water, then extracted in a 60-70 ℃ water bath for 30 minutes, stirred continuously to speed up the extraction speed, and then coarse filtered.

Clarification: 0.2% gelatin was added to the filtrate, stirred evenly, placed below 10 ℃ for 24 hours, and then the supernatant was filtered with a 200 mesh sieve. Before adding gelatin, dissolve it in 10 times water and then add it to Chinese wolfberry leaf juice.

Homogenization and degassing: after blending according to the requirements of the formula, a high pressure homogenizer is used to homogenize. The homogenization temperature is 60-70 ℃ and the pressure is 25 MPA. Degassing was carried out immediately after homogenization, the degassing temperature was 45 ~ 55 ℃, and the vacuum degree was 0.06 ~ 0.08 MPA.

Canning, sterilization, cooling: after canning and sealing, sterilization at 93 ℃ for 5 minutes and 10 minutes, then quickly cool to room temperature with cold water.
