Manufacturing technology of black tea
The manufacturing process of black tea is to kill green, knead, pile and dry. Among them, woodpile is a unique process in the manufacture of black tea, and it is also a key process to form the quality of black tea.
(1) kill the youth
As the leaves picked by black tea are thick and old, with low water content, they need to be stir-fried at high temperature, turn them evenly, and show dark green.
(2) kneading
After killing green leaves out of the pot, immediately knead and twist while it is hot, it is easy to shape a good shape. The method of kneading is the same as that of ordinary black and green tea.
(3) pile
The rolled leaves are piled on the bamboo mat with a thickness of 15cm to 25cm, covered with wet cloth and covered with a cover to keep moisture and heat preservation, and carry out the pile-making process. When the pile is in progress, it should be turned 1 or 2 times at the right time according to the change of pile temperature.
At present, there is no final conclusion on the essence of the chemical change of the pile. At present, there are three theories in the tea field: enzymatic action, microbial action and damp-heat action, but it is generally believed that the main role is hydrothermal action, which is similar to the stuffy yellow process of yellow tea.
(4) drying
There are baking and sun-drying methods to fix the quality and prevent deterioration.
