In recent years, fuelled by endless food safety problems in Taiwan, the issue of food education has also begun to rise everywhere. However, how to integrate the matters that both the hoe representing the agricultural producers and the chopsticks representing the consumers into one teaching plan is really a major lesson in the education of food farmers. More importantly, how do we know whether these food farmers' teaching plans have had an effect and whether they have really changed people's eating behavior about what they eat and what they buy?
If we analyze most of today's examples of food education, it is not difficult to find that the proportion of "agricultural education" is still more than "food education", that is, it is mostly based on in-depth farming and close experience of farming and fishing. and then understand the local ingredients, eat together and other ways as the content of the course, hoping to cultivate the participants' attitude and ability to respect land and nature.
However, in fact, there are too many factors that affect people's choice of food, and the improvement of knowledge and experience alone cannot effectively change people's eating behavior. The long-term cumulative metabolic problems such as obesity caused by busy life, irregular meals and partial nutrition, such as high blood pressure, hyperglycemia and hyperlipidemia, are all caused by people succumbing to delicacy, convenience and cheapness. Therefore, the education of food farmers how to start the process from the learning purpose of "cherishing food" to the implementation of a "balanced diet" of behavior change is a reversal teaching plan that meets the needs of consumers most.
Recruitment of training courses for teachers of nutrition education for food farmers
"Agricultural education" stimulates the enthusiasm of the public to care about food and experience a good diet, while "food education" further promotes changes in people's behavior of self-diet / health management. According to the book Nutrition Education (Nutrition Education) by Prof Isobel Contento of Columbia University in New York, an international expert in nutrition education, statistics from 303 studies in the past 70 years show that the reversal teaching plan design aimed at behavior change can not only enhance the public's knowledge about a balanced diet, but also change the public's awareness and attitude towards diet choices, thus effectively promoting the public's drinking behavior.
In response to the launch of the first year of food education, TNEa Taiwan Health and Nutrition Education Promotion Association and National Taiwan University Biotechnology Entrepreneurship Center will jointly hold a "Food Farmer Nutrition Education teacher training course" in the spring of 2017 to teach the international nutrition education expert Prof. Isobel Contento of Columbia University in New York, teaching plan design, inviting people with lofty ideals for food farmers to learn the factors of applied behavior change theory and psychology. Design a reversal teaching plan that can be quantitatively evaluated, so that farmers' education, diet education, and nutrition education can more effectively promote a sustainable diet that belongs to Taiwanese!
