Grouper is rich in nutrition, delicate and white meat, similar to chicken, known as "sea chicken". Grouper is also a kind of high-quality edible fish with low fat and high protein, which is regarded as one of the four famous fish in China by Hong Kong and Macao. The main producing areas of grouper in China are Zhejiang, Fujian, Guangdong, Guangxi, Hong Kong, Taiwan, Hainan and other places.

Most of them are produced along the coast of China and in the waters of Nansha Islands of Xisha Islands, which are important economic fishes of large and medium-sized warm-water seafood. There are 12 species of grouper distributed along the coast of Fujian. Red grouper, salmon grouper, moire grouper and reticulated grouper are common species with high economic value.

On June 13, 2013, the China Fisheries Circulation and processing Association awarded Zhangzhou the title of "grouper capital of China".
