Veal production means that calves are slaughtered when they are born to 6 to 8 months old and fattened to 250 to 350 kilograms under special feeding conditions. Veal has a unique flavor and is expensive. Under the existing conditions in China, Holstein calves should be selected for veal production, and the calves of Simmental hybrids of more than three generations can also be selected for fattening by making use of its characteristics of fast growth and development in the early stage and easy to organize production. Calves are required to be born more than 35 kilograms.
