The main cause of rotten bean sprouts is bacterial infection, the reasons are as follows: 1, bean seeds carry pathogens; 2, containers and utensils filled with bean sprouts are still infected with bacteria without thorough disinfection; 3, the temperature is too high or low; 4, watering is not timely, water quality is not clean; 5, air pollution.

Production countermeasures:

1. Select beans with full grains. Before soaking seeds, remove diseased grains, shrunken grains, tender grains and broken grains. Then wash the seeds with 0.5% bleach solution and 5% lime water. Hot water can also be used to blanch seeds, which helps to disinfect and sterilize bean seeds. At the same time, it can improve the enzyme activity of bean seed, increase the germination rate and reduce the incidence of disease.

2. Strictly disinfect bean utensils: containers and utensils for producing bean sprouts need to be strictly disinfected before use, in addition to being clean. Generally, they can be washed and disinfected with 0.5% bleach or 5% alum solution, or burned with torches to kill attached pathogens. If conditions permit, a 40-watt ultraviolet germicidal lamp is installed in the bean sprout culture room.

3. Control the temperature: the optimum temperature for the growth of bean sprouts is 20 ℃. In the process of production, the room temperature should be adjusted to this temperature to make the bean sprouts grow at a suitable temperature and reduce rotten buds.

4. Clean water quality: use well water or stream water, and prohibit unclean pond water and river water. No pollution of well water, coupled with warm in winter and cool in summer, can promote the growth of bean sprouts and prevent bean sprouts from overheating. Drench water regularly and quantitatively, drench once every 6 hours, and wash away the metabolic waste of bean sprouts with the current.

5. Drug prevention and treatment: in the early stage of bean sprout disease, a small packet of "8503" is sprayed with 2.5kg water, once every 4 hours, which can inhibit the spread of bacteria. Or spray with EJ- 2 disinfectant diluted 200times.
