The simple storage methods of ginger are as follows:

1. Ginger is strictly selected in closed storage, leaving good quality bulk pile in the warehouse, covered with straw curtains and prepared for storage. Then build a brick wall in the south direction of the warehouse, separate a small warehouse, and apply mud on the brick wall to block the brick joint to prevent the cold wind from blowing in. The ginger is piled in the brick wall. The ginger pile is about 2 meters high. A number of ventilation tubes made of reeds are evenly placed on the top of the pile to facilitate ventilation. When storing, there is no gap in the corner, but it can be slightly loosened in the middle. Immediately after stacking, use mud or straw bags to close the top. The storage should not be too large. Generally, it is appropriate to stack about 5000 kilograms per warehouse. The reservoir temperature is generally controlled at 18-20 ℃. When the air temperature drops, the heat preservation of the mulch can be increased; if the air temperature is too high, the mulch can be reduced to cool down.

2. Where the underground water level is high, ginger is often stored by the pit burying method. The depth of the pit is based on the principle that there is no water. The pit is generally 1 meter deep, about 2 meters in diameter, wide at the top and narrow at the bottom, round or square, and one pit can store about 2500 kilograms. A straw handle is set up in the center of the pit to facilitate ventilation and temperature measurement. after the ginger is set, the surface is first covered with ginger leaves, then covered with a layer of soil, and then covered with soil as the temperature drops. The total thickness of the covered soil is 60 cm to 65 cm. In order to maintain a suitable storage temperature in the pile, the top of the pit is made of rice straw to prevent rain, and drainage ditches are set around it. Wind barriers are set up in the north to protect against the cold.

In the management of storage, we should guard against both heat and cold. The temperature is easy to rise at the initial stage of entering the pit, and the pit mouth can not be completely closed. Within the first month, it is required to maintain a higher pit temperature, which is more than 20 degrees, and then it can be kept at about 15 degrees. The pit mouth must be strictly sealed in winter to prevent the pit temperature from being too low. Always check for changes in ginger pieces during storage, and there can be no stagnant water at the bottom of the pit.

3. The sand buried pit is made of bricks and stones in the warehouse or basement, with a height of about 0.8 meters, a width of about 1 meter, and no limit in length. During storage, lay a layer of sand with a thickness of about 5 cm and a water content of about 10% in the bottom of the pit, then put in several ventilators, and then put the selected ginger on the sand in the pit, a layer of ginger (four or five pieces of ginger thick) and a layer of mud, heap to about 5 cm from the mouth of the pit. Finally, it is covered with sand to keep the ginger from being exposed to the air.

4. The air-raid shelter stores one or two layers of ginger in a rectangular stack of 1 meter high and 1 meter wide, each weighing 1250-2500 kilograms. In the middle of the stack stands a ventilation beam of about 10 centimeters in diameter tied up with thin bamboo poles, and the well is put into a thermometer to measure the temperature of the stack. The sides of the stack are sealed with wet sand. after sealing the stack, close the door of the cave and leave air holes on the hole to prevent the cold wind from blowing in.
