Where is the origin of truffles?
Truffle is the general name of a kind of mushroom of the genus Mycelia of Ascomycetes. There are about 10 different species, usually annual fungi, most of which grow at the root of broad-leaved trees. They generally grow under pine, oak and oak trees. They have a special smell and are rich in proteins, amino acids and other nutrients. Let's take a look at where the truffles are from.
Where is the origin of truffles?
Truffles are produced in Italy, France, Spain, China, New Zealand and other countries, among which French black truffles and Italian white truffles have the highest evaluation. The shape of Chinese truffle is very similar to that of French black truffle. The scales of the outer skin are relatively small, and the white stripes inside are relatively fine, which mainly grow in the fibrous root of pine trees. This is also the origin of the Chinese name "truffle". The mature Chinese black truffle has a complex mushroom flavor, which is an incomprehensible smell.
Edible value of truffle
Truffle is rich in protein, 18 kinds of amino acids (including 8 essential amino acids that cannot be synthesized by human body), unsaturated fatty acids, multivitamins, zinc, manganese, iron, calcium, phosphorus, selenium and other essential trace elements, as well as sphingolipids, cerebrosides, ceramides, triterpenes, androsterone, adenosine, truffle acid, sterols, truffle polysaccharides, truffle polypeptides and other metabolites, which have high nutrition and health care value. Among them, male ketones have significant effects of aiding yang and regulating endocrine, and sphingolipids have obvious activities in preventing senile dementia, atherosclerosis and anti-tumor cytotoxicity. Polysaccharides, peptides and triterpenes can enhance immunity, anti-aging, anti-fatigue and can be used for health care.
The producing environment of truffles
1. Truffles grow in the soil and are stem truffles attached to the roots of pine trees. They contain large amounts of water and trace mineral elements such as potassium, calcium, magnesium, iron and fluorine. Unlike ordinary mushrooms, mushrooms are soft and juicy, but the texture is harder. Prefer alkaline soil, high-quality truffles are mainly produced in calcareous topographic areas, such as Alba in Italy, Perigo in France, Yunnan in China, etc., all located in calcareous topographic areas.
2. The nutrients of truffles come from attached roots and soil. If truffles have been grown in a place, the nutrients of the land and plants will be completely absorbed by truffles, and nothing else can be grown for a period of time. In the process of growing up, I can't stand any subtle environmental changes, and it's amazing to be picky about the environment, but at present, Western countries have achieved semi-artificial growth.
3. Truffles especially like to grow under pine, oak, poplar, willow, hazel and Linden trees. The color and smell vary from tree species to tree species. Today, mechanized farming methods, soil sprayed with pesticides, excessive or low rainfall, and changes in forest tree species are also the main reasons for the massive reduction in truffle production in the 20th century.
