There are many kinds of crabs, only there are about 600 species of Chinese crabs, including swimming crab, green crab, frog crab, Guan male crab and so on. Due to the different geographical location of distribution, there are also grades: first class is lake crab, such as Yangcheng Lake and Jiaxing Lake; second class is river crab, such as Jiujiang and Wuhu; third class is river crab; fourth class is river crab; fifth class is ditch crab; sixth class is sea crab.

Eriocheir sinensis, the scientific name of Eriocheir sinensis, belongs to crustaceans, taxonomically belonging to the phylum Arthropoda, Crustacea, Crustaceae. Breed in sea water, grow in fresh water, like to dig holes and live, often hide in the banks of rivers and lakes, or hidden in gravel, water plants.

Stone crab

Green crab

Flower crab

Flower crab is also called Yuanhai swimming crab. The width of the head and chest nail is about 2 times the length, fusiform, with rough particles on the surface, and the female particles are more significant than the male; the forehead has 4 teeth, the middle one is shorter, the adult is more sharp, and the larva is more round and obtuse; the anterior edge has 9 sharp teeth, and the last teeth are much larger than the front teeth, protruding to both sides.

Swimming crab

Swimming crab is named because its head and chest nail is in the shape of a shuttle. There are three protuberances in the center of the carapace, so it is also called "three verrucous swimming crab".

Red crab

Red crab, also known as cross crab, has a head and chest nail about 1.6 times the width of the length and a smooth surface; the forehead has 6 teeth, the central 4 teeth are similar in size, and the outer teeth are narrow and sharp; the anterior lateral edge has 6 teeth, the first tooth is flat and obtuse, the central front edge is concave, and the last tooth is smaller than the other teeth, but it is more sharp and prominent. Chelate feet are quite stout, zygomorphic; palmar segments abaxially with 4 spines; medial margin of long segments with 3 sharp spines. The head and chest nail is reddish brown with yellow stripes and there is a yellow cross in front of the middle. The chelate feet are red and the cloth has yellow markings, and the front end of the two fingers is dark brown.

Bread crab

Bread crab, also known as scallop crab, Xiaoyao crab, etc., the back of the head and chest nail is very long, the surface is covered with 5 verrucous protuberances, the side is covered with soft hairs, the forehead is narrow, the front edge is sunken, divided into 2 teeth, the eye socket is small, the front edge has granular teeth, the posterior edge has 3 teeth, and the middle part of the posterior edge has 1 round obtuse tooth, 4 triangular sharp teeth on each side. The shape of the chelate foot is asymmetrical, the knuckles on the right are stronger, and when the chelate foot contracts, it clings to the forehead. The feet are slender and smooth. The male abdomen is long in shape, the third to fifth segments are healed, the sutures can be identified, the sixth section is nearly rectangular, and the seventh section is sharp triangle. The female abdomen is broad and long, the sixth section is nearly rectangular, and the seventh section is triangular.

Glittering and clear

The glittering head and chest nail is bare and glabrous, but has fine particles and transverse eminence lines; the forehead has 6 teeth, the central 4 teeth are similar in size, the lateral teeth are narrow and sharp, and the anterior margin has 6 teeth, the first to fifth teeth gradually increase, and the terminal teeth are the smallest and thorn-like.

Three-point crab

The three-point crab is also called the red star swimming crab, the head and chest nail is fusiform, the width is about 2 times as long; the front surface of the head and chest nail is granular, the rear part is smooth; the forehead is divided into 4 teeth, the adult is spiny, the larva is obtuse, and the lateral teeth are larger than the central teeth, but not more prominent; the front edge has 9 teeth, the first tooth is longer and sharper than the subsequent 7 teeth, and the last tooth is the largest, protruding to both sides. The length of the chelate foot is slightly larger than the width of the head and chest nail, the leading edge of the long segment has 3-4 spines, and the knuckles are very long. The final step table is covered with soft hair, and the rear surface is smooth and thorny-free. The head-chest nail and chelate feet are green-yellow, there are three round red spots with white edges at the back of the head-chest nail, the movable fingers of the stinging feet are marked in red, and the feet are roughly light blue.

Asahi crab

It looks weird, like shrimp and crab. In Taiwan, Penghu has the most output, thin shell and meat, and tastes delicious. As a result of the habit of hiding in the rocks on both sides, the sand ditch zone in the middle shows only the orange forehead, such as the rising sun.
