Straw mushrooms cannot be kept in the refrigerator. Because straw mushroom is a high-temperature edible fungus, fresh straw mushroom is not allowed to be stored in the refrigerator directly, otherwise it will autolysis into water. If the fresh straw mushroom is stored below 12 ℃, the cold injury will occur on the surface. If the storage temperature is above 15 ℃, and because of strong respiration and rapid consumption of body, the mushroom body softens quickly and produces peculiar smell, so it is very difficult to store straw mushroom after harvest, and the optimum storage temperature is 12 ℃ ~ 15 ℃. But it can only be stored for 2-3 days, so straw mushrooms can't be frozen. It's best to buy as much as you eat.

Straw mushroom can be preserved temporarily in light salt water, but it is not as fresh as fresh taste. 2. Choose fresh, tender, spiral, hard, intact mushroom body, no umbrella, no loosening, no mildew, no rupture, no mechanical injury.
