Wuyi rock tea (Dahongpao) picking is different from general red and green tea, its fresh leaf picking standard is new shoot bud leaf growth maturity (open face three or four leaves), no leaf water, no damage, fresh, uniform. Fresh leaves should not be too tender, too tender tea aroma low, bitter taste; nor too old, too old taste weak, coarse aroma. Making green is an important stage to form the quality of Dahongpao. Baked in water

Rock tea is "baked" in a closed roasting room with a cage. The operation is carried out by "flowing water method" on baking holes with different temperatures (90~120℃). The compound kneaded leaves were baked at high, low and high temperatures, reaching 60% to 70% dry baking. The whole process took more than 10 minutes. Speed is fast, work is intense, so it is also called "swing water bake".

Fanning, cooling and picking

After baking in water, fan to the end, and then spread cool for 5-6 hours to enhance the ripening effect, so that the taste is mellow, the color is yellow and Pu Run. After picking and removing stems and tea leaves, it can be recultivated.

Stewing and packing while hot

After picking, the tea strips are first rebaked at 90~100℃ for 1-2 hours, and then the tea strips are stewed at 70~90℃. This is a unique process of Wuyi rock tea, which has a good effect on improving soup color, bubble resistance, taste and aroma aging. The final hot packing is also a heat treatment process, which also has a certain good impact on the quality.
