Advanced countries have gradually regulated the nitrate concentration of vegetables to protect consumers. For example, Germany stipulates that the nitrate content in spinach for infants should not exceed 250 ppm. The safe dose announced by the World Health Organization (WHO) is 3.65 mg per kilogram of body weight per day, which means that a person weighing 60 kilograms can consume about 220 mg of nitrate per day. Therefore, if you eat half a catty (300 grams) of vegetables per day, the nitrate content in vegetables should not exceed 670 ppm, and if you eat 400 grams, the content should be below 500 ppm.
Peng Wang Chia-kang, academician of the Academia Sinica and director of the National Cancer Research Group, believes that in the past the ROC did not set standards for nitrate in leafy vegetables, mainly because most farmers still used animal waste as fertilizer and rarely used chemical fertilizer.
