Traceability of food is equivalent to labeling food with "ID card", which requires the establishment of a complete traceability system. The system must have the ability to identify the product, record the real-time status of the product from the source to the table, record the product attributes and processing characteristics when necessary, and organize and analyze the input information. Foreign developed countries have clear requirements for food traceability for a long time. For example, in Europe, the Codex Alimentarius stipulates that the management mode of positive and negative two-way traceability is the minimum requirement of traceability system; the United States also has clear requirements for food traceability, and the initial production label and other information in the pretreatment, production and storage process of food need to be registered as the basic measures in traceability system.

Aquatic products are one of the food categories with the largest consumption by the common people, and Fujian Province, as a major import, export and consumption province of aquatic products, enterprises and ordinary consumers naturally pay special attention to the safety of aquatic products. How can we better label aquatic products with "ID cards"? Therefore, as a professional third-party food safety inspection organization and a scientific and technological enterprise in Fujian Province, Fujian Zhongjian Huari Food Safety Inspection Co., Ltd., a subsidiary of Fujian Company of China Inspection Group, has participated in the development and promotion of "aquatic product identity traceability system" based on the research on aquatic product identity traceability system for many years. This project won the third prize of Provincial Science and Technology Progress awarded by Fujian Province Government in January 2015. This project can connect all links of production, inspection, supervision and consumption of aquatic products enterprises, establish food safety information database by extracting safety traceability elements concerned by consumers in supply chain links such as production, processing, circulation and consumption of aquatic products, protect the legitimate rights and interests of consumers from the source, improve the safety control level of aquatic products of enterprises, and improve the ability of government supervision at the same time.

"Safety on the tip of the tongue" needs to be eradicated from the system, and it needs strong scientific and technological support. It strengthens the supervision of food from the source to the table, which can not only reduce the infection caused by foodborne diseases, but also in the outbreak of food quality and safety crisis, manufacturers and governments can quickly identify risks and reduce the harm to people's health.
