Last Updated: 2024/11/06, Due to the rapid development of China's economy, the main consumer markets of China's aquatic products have expanded from the traditional fish-eating coastal areas such as Beijing, Shanghai, Qingdao, Dalian and Shenzhen and the eastern areas adjacent to the coastal areas to the central and western regions.

Due to the rapid development of China's economy, the main consumer markets of aquatic products in China have expanded from the traditional fish-eating coastal areas such as Beijing, Shanghai, Qingdao, Dalian and Shenzhen and the eastern areas adjacent to the coastal areas to the central and western regions. The consumption structure has also been upgraded from carnivorous to aquatic products, mainly due to the improvement in quality and quantity of consumer demand driven by the economic development of these areas. The gap of regional economic development has the characteristics of making this trend develop faster.

The consumption of aquatic products is mainly concentrated in the eastern region, which is related to the economic development, the income level of residents, the supply capacity of products and other factors. In terms of cities, the top provinces and cities in terms of consumption expenditure on aquatic products include Fujian, Shanghai, Zhejiang, Guangdong, Hainan and other provinces and cities, of which Fujian and Shanghai's per capita consumption expenditure on aquatic products reached 999.62 yuan and 817.64 yuan respectively (2010). The per capita consumption expenditure of Zhejiang, Guangdong and Hainan was 713.79 yuan, 657.73 yuan and 669.83 yuan respectively (2010). In rural areas, in order to reduce the consumption gap between urban and rural areas, the Chinese government not only promotes urban-focused aquatic product consumption, but also actively expands aquatic product consumption in rural areas. In 2010, the consumption of aquatic products in rural areas of Shanghai, Zhejiang, Fujian, Guangdong and Hainan reached 17.21 kg, 16 kg, 15.06 kg, 14.55 kg and 15.74 kg respectively, much higher than the Chinese average of 5.15 kg.

Therefore, in the future, China's aquatic product consumption market will show the development form of spreading from the current urban center to inland areas on the basis of expanding the industrial construction such as circulation system and the structural change of consumption consciousness. In 2007, the per capita share of aquatic products in China was 36.23 kg. By 2011, the per capita share has increased to 41.84 kg, an increase of 1.41 kg over 2010.

Recently, the consumption tendency of aquatic products in Chinese cities has shifted from freshwater fish to marine fish, and consumer demand has begun to shift to fresh frozen food. Coupled with the urban consumption pattern from household consumption to eating out, this phenomenon appears to accelerate.

Most of the dining out in the city are Chinese restaurants or western restaurants, which are spent in the form of entertaining guests, family dinners, dates and so on. Chinese people attach great importance to banquets, and it is Chinese traditional culture that they must be invited back again. Therefore, the consumption of eating out by social groups is very high, and while this growth expands in urban areas, it will also expand the overall aquatic market with the change of food consumption structure. Therefore, due to changes in household consumption patterns caused by economic growth and changes in social diet structure, as well as government policies to expand demand, China's per capita consumption of aquatic products will continue to grow in the next few years. At the same time, the overall base of China's population is large, and the scale of the aquatic products market will be even larger.
