Breakthrough progress in edible animal bone processing technology

Edible animal bones such as livestock and poultry bones are valuable foodborne protein, fat and mineral resources. At present, the annual output of livestock and poultry bone in the world is as high as more than 46 million tons, and China accounts for 22 percent, or about 12 million tons, which exceeds the combined output of livestock and poultry in Europe and the United States. The bone by-products produced by slaughtering in China contain 2 million tons of high quality protein, which is enough to meet the annual protein needs of 80 million people. However, for a long time, livestock and poultry bone has been used in a single way, extensive processing methods, serious waste of resources and environmental pollution, low added value of products, poor quality, poor adaptation of processing technology and equipment, high energy consumption and difficulties in industrialization. it has become an unresolved worldwide problem and has been perplexing the international food processing industry.

Since 2009, supported by the "948" Project of the Ministry of Agriculture and the International Cooperation Project of the Ministry of Science and Technology, the scientific research team led by Zhang Chunhui, a researcher at the Institute of Agricultural products processing of the Chinese Academy of Agricultural Sciences, uses edible bones such as chicken, pig, cow, sheep and fish as raw materials, focusing on key bone processing technologies, equipment and products, such as raw material bone pretreatment, efficient hot pressing extraction, targeted enzymatic hydrolysis, energy saving, efficient concentration and flavor gain. The high efficiency crushing and separation process of raw bone has been optimized, and a new type of "meshing tooth" high efficiency bone breaker and "differential" tapered sieve hole high efficiency bone and meat spiral separator have been developed. the crushing and separation efficiency has been increased by 20% and 30%. The hot pressing high efficiency extraction technology of osteobin was created, the migration law of nutrients in hot pressing extraction was revealed, and the hot pressing extraction device was developed, which improved the applicability, safety and energy saving of equipment, and the extraction rate of bone collagen was up to 95%. Energy saving 20% The integration of ultrafiltration-nanofiltration-reverse osmosis membrane gradient concentration and vacuum concentration process coupling equipment was realized, the concentration efficiency and product quality were improved, the concentration efficiency was increased by 30%, and the energy saving was 36% mae 45%. The process conditions of ostein gradient targeted enzymatic hydrolysis were determined, the process conditions and flavor gain of ostein derivatization were optimized, and an integrated multi-functional enzymatic hydrolysis tank device for extraction, enzymolysis and blending was developed. New products such as ostein, broth, bone oil, chondroitin sulfate, flavored peptide and meat flavor were developed. it meets the consumption needs of nutritious, delicious, natural, healthy and safe bone food in catering industry, convenience food industry, meat processing and family kitchen, and constructs a new model of comprehensive utilization of edible bone in China.

The project has broken through 5 sets of key technologies, developed 6 sets of equipment, developed 6 types of innovative bone source foods, formulated 7 standards, obtained 30 authorized patents and 6 software copyrights. The integrated breakthrough of "technology-equipment-product-standard-promotion" has been achieved, and the achievement of "R & D and application of key technology and equipment for ostein processing" has passed the expert group appraisal organized by the Ministry of Agriculture. The overall technology is in the international leading level. Ten demonstration production lines have been set up in Henan, Shandong, Inner Mongolia and other places. The demonstration enterprises accumulated an additional output value of 2.154 billion yuan, profits and taxes of 465 million yuan, increased revenue and reduced expenditure of 139 million yuan, and achieved remarkable economic, environmental and social benefits.
