Tender stems and leaves are soft and suitable for cooked food with unique flavor. Strong resistance to heat and drought, weak resistance to cold, strong resistance to diseases and insect pests, but sometimes prone to white rust. Under the condition of warmth and sufficient water and fertilizer, it grows rapidly and can be harvested more than 20 days after sowing. Harvest should be timely, otherwise the fiber will increase and the quality will decrease. The average yield is 2000 kg per mu.

3. Pointed leaf amaranth

The height of adult plant is about 22 cm. The whole plant has 12 leaves, the leaves are narrow and long, the large leaves are 7 cm long and 3.6 cm wide, they are broadly lanceolate, grayish green with deep purplish red or all dark purplish red, the leaf margin is nearly entire; the petiole and stem are purple red, and the leaves and stems are covered with white short hairs. Tender plant meat slightly thick, containing more fiber, suitable for cooked food, unique flavor. Heat resistance, drought resistance, cold tolerance is weak, but slightly cold-resistant than round leaf amaranth, disease and insect resistance is stronger, the growth rate is similar to that of big-leaf amaranth. The yield is 1500 kg per mu.
