Egg spots can be caused by a variety of factors: inflammation in the fallopian tubes of eggs, feed problems that cause spotted eggs, or mildew and deterioration of eggs.

Because the shell of the egg has many pores, bacteria and mold will enter the inside of the egg through these pores. Black spots appear on the inner wall of the eggshell, but the yolk egg white is not broken, because the mold enters the shell through the stomata, destroying the shell membrane, and the mold grows and accumulates into black spots.

Some eggs are caught by rain or moisture, which will destroy the protective film on the surface of the eggshell and make the bacteria invade the inside of the egg to become moldy and deteriorate. Although there are no obvious symptoms of decay on the surface, the quality of such eggs has declined and is not recommended.

How to store eggs

Eggs should be stored vertically with their heads upside down. Fresh egg whites are thick and can effectively fix the yolk position. However, with the extension of storage time, the mucin in the protein will slowly dilute under the action of protease and lose the role of fixing egg yolk. Because the specific gravity of the egg yolk is smaller than that of the egg white, the egg yolk will float up, close to the eggshell and become sticky or rely on the yolk. If you put the egg head up, there will be an air chamber in the egg head, in which the gas will prevent the yolk from being close to the eggshell.
