Cold chain logistics is composed of many links, from the planting and procurement, processing, circulation and distribution of food raw materials to retail and consumption, is a complex cryogenic system engineering. Ensuring the quality and safety of each link is the core of cold chain logistics. To ensure the quality and safety of frozen food, the most important thing is that the "cold chain" can not be broken, that is to say, in the process of food manufacturing, storage, transportation, distribution and retail, it should always be in a controlled state of low temperature. The insufficient number and non-standard operation of refrigerated vehicles are becoming an important hidden danger to the safety of cold chain food. Due to many reasons, in recent years, the annual production and sales of refrigerated and insulated cars in China has been maintained at 4000Mel 5000 vehicles, which is far from meeting the actual needs of the frozen food market.

Cold chain deficiency restricts the development of enterprises

Due to the underdevelopment of third-party cold chain logistics, many frozen food enterprises are still in the stage of self-logistics, which seriously affects the core competitiveness of enterprises.

Fine management to ensure the quality of constant temperature

Why do many frozen foods have quality problems such as dumplings are scattered in a pot and fish are broken in a pot? The problem lies in the temperature fluctuation of perishable food during transportation. In addition to the non-standard transportation of cold chain food and improper storage in supermarkets and shopping malls, one of the most important reasons for this situation is the confusion of cold chain logistics standards in our country. On the one hand, at present, China's cold chain logistics standards cross each other in national standards, industry standards and local standards; on the other hand, most of the cold chain logistics standards are recommended standards, which are not mandatory. The binding force of non-mandatory standards is very low in the immature reality of the cold chain logistics industry, and the guiding role for cold chain logistics enterprises is very limited.

Specifically, the whole cold chain from warehousing, transportation to distribution, and then to terminal consumption, must be within the prescribed temperature range. It involves the staffing, the efficiency of loading, the coordination of time, and so on. For example, it can be so fine that each car must be equipped with two drivers to prevent fatigue driving, changing drivers every four hours, and putting two thermostats, one in the middle and one in the back. Each car is equipped with an infrared detector to measure the temperature before loading, because the out-of-warehouse temperature of a product is very important for the whole cold chain transportation. First of all, the temperature is controlled from the starting point. Then record the temperature every four hours. To ensure the quality of food, not only low temperature, but also "constant temperature" is more important. A constant temperature requires strict standards to achieve.
